Dumbledore didn't know about the room. When he mentions it (during the Yule Ball), it's obvious that he came across it by accident and later couldn't find it. The only one from the staff who knew about it (as far as we know) is Professor Trelawney.

^ Could be she said that, but that doesn't neccesarily mean it's true, do you believe everything she says? (Anyway, if Dumbledore didn't know about it, I doubt anyone else did or else they would have told DD. Trelawney probably didn't tell him so he wouldn't find her sherry bottles... Smile )

As for Filch, I don't think he knew about it and what it really did, I think he just chanced upon it once when he needed cleaning materials just like DD found it when he needed a bathroom.
