I agree, that's one of my favorites, too.
I grew up listening to this one... laugh if you must but I love it...

Silent Night. No words, just the piano by itself.
I'm not sure if it's classified as Christmas music, but since I only really hear them around Christmas time, I like Trans-Siberian Orchestra, as well. Couldn't tell you the name of anything they do, but I had an album of theirs a couple years ago and I loved it.
